This is the third in my Kitchen Conversations series — audio notes from my home kitchen, where I cook a recipe from our seasonal cookbook club, share reflections on food as care, and invite you into the slow rhythm of seasonal living.

This month, I’m cooking from One: Pot, Pan, Planet by Anna Jones — a cookbook I chose very intentionally for April and Earth Day. Anna’s gentle approach to low-waste, plant-forward meals feels like a natural companion to the idea of planetary health — and a reminder that small choices in our kitchens can ripple outward with care.

The dish I’m making — Roasted Rainbow Carrots with Beans + Salsa Rustica — is simple, vibrant, and deeply grounding. It’s also the perfect kind of recipe for this early spring in-between season.

And in this episode, I also share a story I’ve been carrying for a long time — about a note that first sparked the idea that “the doctor will cook for you now.” I think you’ll know what I mean when you hear it.
