I whole heartedly agree that making food FUN and delicious is an incredibly important aspect of health that is often overlooked when transitioning to Whole Foods cooking. Food enjoyment in all facets is such an important aspect to human happiness and therefore also vital to increasing adherence to healthy habits.

Hi Michelle--I just love this topic and how you presented it. I've been slowly combing through my pantry this winter to get it more organized and I found a bag of millet. I'd love to hear what you do with millet! Also, thanks so much for the mention; whole grains can be so misunderstood.
Thank you so much, Annie! I’d still consider myself a “millet newbie”, but my method has been to batch cook it in the InstantPot on Sundays. While it’s cooking (only takes 10 mins), I make a savory mushroom & veg sauté (bok choy, garlic, ginger, greens, mushrooms) as the topper. I will usually serve the savory porridge with soft boiled egg, a little chili crisp, and fresh green onions. I’m venturing into marinated tofu as an egg alternative. It’s fun to experiment!

This piece also resonates with me: Mindset matters and research shows that an appeal mindset (i.e. fun, joyful, delicious, tasty) leads to greater engagement in health behaviors compared to a health focused mindset (i.e. meeting daily guidelines, focusing solely on the health benefits)…
100% without a doubt focusing on creating delicious recipes instead of being solely focused on eating healthy has changed my relationship and made “healthy” more consistent without being the goal.
